So tonight I set out to bake a cake for a potluck tomorrow. Then I realized that I didn't have any oil. No worries I think I can use apple sauce instead. First hurdle over. Then I realized that I didn't have a large baking dish. Um... I did have a little one, so no worries I guess, I will just have to use the little one twice and make one of those fancy pants double layer cakes. Over second hurdle and still in the race. Then I realized that I only have two measuring cups, 1/2 and 1/4. Um...1/3 cup of oil, I mean apple sauce. Good thing I got an A in math. Yes, over another hurdle. Then I realized I don't have a mixing spoon or a mixer. This was the toughest of the hurdles as my wrists have been starting to hurt bad and my pinkie fingers are numb from all the crutching. Oh well, I will just tell everyone that the powder chunks are "flavor crystals." The thought of eating all the cake batter tonight did cross my mind so spare the poor souls from eating my "flavor crystal double layer cake with inaccurate amounts of apple sauce" tomorrow.
